Common Questions About Kitchen Knives

What are the parts of a knife?

To understand different styles of professional kitchen knives and why some are better for certain uses than others, we need to understand the structure and terminology of knives. Starting from the blunt end, we have the handle, which is where the wielder grips the knife. Handles can have finger indentions, gripping surfaces, or just be plain and smooth. Inside the handle, a metal extension of the blade called the tang provides stability and durability. The section where the blade meets the handle is the heel and is frequently thickened for more durability. The blade consists of the edge, point, and spine, and on only one side of the blade is the edge, the cutting surface, where the blade is sharpest. The spine is on the opposite side of the edge and provides stability, and the point is, appropriately, the point of the blade, where the spine and edge converge.

Which knives fit which applications?

Kitchen cutlery is typically named for its intended purpose, which means choosing between them is a bit easier. Carving knives, cheese knives, butcher knives, and other cutlery knives are all made to fit the purpose for which they're named, but others are a bit more confusing. The chef knife is made to be an all-purpose knife – ready to accomplish whatever task the chef needs done. Tourne knives are made for peeling fruits and vegetables or for cutting precise designs. Consult the specific product page to ensure the commercial kitchen knives you purchase will meet your needs.

What is a mezzaluna?

Mezzaluna is Italian for "half moon," and the knife gets its name from that half-moon shape. Mezzaluna knives are used by rocking them back and forth across herbs or garlic, mincing the product before cooking, but these knives have other uses as well. Made with as many as three blades, mezzalunas reduce the force and arm motion needed to mince produce because the rocking motion is comfortable for the user. Consider a mezzaluna if you frequently mince your own herbs.

Which material should I choose?

Culinary knives are typically made from one of three materials – carbon steel, stainless steel, and ceramic. Carbon steel knives are harder than stainless steel but are vulnerable to rusting and staining. Stainless steel requires little maintenance but will not hold its edge as well as carbon steel. Ceramic knives are softer than either type of steel but are lightweight and will not rust.

What accessories can help with professional cutlery?

KaTom carries a variety of accessories to help operators keep their kitchen running safely and smoothly. Safety equipment, such as knife guards and cut-resistant gloves, ensure users are protected from the dangerously sharp edges of professional-grade knives. Organizational tools, such as knife blocks, knife bags, and knife holders, ensure your professional kitchen knives are always neatly stored when not in use to reduce accident potential.
