What are you holding? Different food items and beverages require specific holding temperatures and conditions, so be sure the commercial fridge you consider provides those temperatures. For example, a wine cooler may maintain higher temperatures for red wine than an upright unit designed for safely holding ingredients, and only certain refrigerated display cases are approved for food storage.
How much will you hold? Capacity is another crucial factor in the decision making process as you shop for a commercial cooler. It's better to opt for a higher capacitythan end up with one that's too small for your needs if you're holding a higher volume than usual. Commercial refrigerators rely on airflow; a unit that is overloaded can't maintain proper airflow, which could mean it can't hold set temperatures and might cause the unit to wear out quicker than usual.
What access is needed? This starts with knowing whether the unit will be used by guests or staff, since back-of-house models generally have a more utilitarian appearance. For units used in commercial kitchens, you'll need to consider the flow of your operation and how frequently employees access items stored in the unit.
