The Traulsen RIH232L-FHS 208 roll-in holding cabinet has a ducted fan air distribution system that minimizes temperature stratification inside the cabinet while lowering energy consumption. Air is forced across the large surface area so heat is moved through a down-air distribution duct, ensuring that heat is evenly distributed throughout the cabinet without drying food out. A serpentine-style heater is used to generate electric heat, and a top-mounted vent helps control humidity so food does not become soggy. Stainless steel rack guides are easily removable. Full-length, stainless steel doors are self-closing but have a stay open feature at 120 degrees so loading and unloading the cabinet is easy. Gaskets on the door keep heat from escaping, while polyurethane insulation keeps heat inside on the cabinet and doors. The Traulsen RIH232L-FHS 208 roll-in holding cabinet accepts roll-in racks that are up to 66 inches tall.
