Designed for high efficiency in kitchens, the Vollrath 59501 Mirage® commercial induction cooktop only operates when compatible cookware is placed on its eye. When the pan is in position, the electrons in the metal vibrate rapidly to create friction, which generates heat. This is possible because the dense copper coil in the unit creates a magnetic field above the cooking surface.

The ceramic top on this Vollrath 59501 drop-in induction cooktop withstands heavy use and streamlines the cleaning process, dropping into an existing countertop cutout and connecting to a control box with a 4.9-foot cord. Controlling the unit is straightforward with the adjustable power levels and temperature options. The temperature display can show the level in Fahrenheit or Celsius, and the timer has a 180-minute limit.
