What Grill Does Shake Shack Use?
Shake Shack began as a hot dog cart in New York City’s Madison Square Park in 2001. Since then, it has expanded to more than 400 locations worldwide with a menu revolving around burgers, hot dogs, and milkshakes.
Shake Shack uses Lang griddles with Selectronic™ controls, an electronic temperature control system designed for precise, stable heat management. These controls are included in the Lang 148SC and 172S. Both models provide a 23-inch-deep cooking surface, 1-inch-thick plate, and independently controlled sections.
How Shake Shack Griddles Work
Lang griddles with Selectronic controls divide the cooking surface into independently controlled 12-inch sections. Temperature sensors monitor each section and activate the heating elements in response to plate temperature changes as food is added to the surface. Selectronic controls can respond to a 1-degree-Fahrenheit change in griddle plate temperature, helping the equipment maintain closely regulated cooking conditions throughout service.
The thick cooking plate stores heat and distributes it across the surface. The 48-inch Lang 148SC uses four heating elements, while the 72-inch Lang 172S uses six. When cold burger patties cause a temperature drop, the griddle’s controls automatically direct power to that section to return it to the set temperature. This heat retention supports consistent cooking during busy service periods.
The Benefits of Lang Griddles
Lang griddles support consistent burger production with key features that help staff manage the cooking surface, including:
- Responsive Temperature Control: Selectronic technology monitors plate temperature changes and cycles the heating system to support repeatable cooking conditions
- Independent Cooking Zones: Controls positioned every 12 inches enable staff to operate individual sections based on production needs
- Grease Management: High splash guards and a dedicated grease trough help contain runoff and simplify routine scraping between batches
- Heavy-Duty Construction: Stainless steel design supports durability in demanding environments
How Lang Griddles Can Improve Your Commercial Kitchen
Griddles with independently controlled zones can help restaurants, diners, and fast-food operations maintain consistent cooking temperatures and adjust production based on demand. During slower periods, staff can cook in selected sections, then fire up the full surface during a rush to maximize cooking capacity.
When selecting a griddle, match its width to peak production needs and available counter space. For an electric model, ensure the kitchen’s utilities can support its power requirements, as models range from 12 to 36 kilowatts. Also confirm ventilation, clearance, and installation requirements before selecting a model.
