Great for cooking pizzas of varying sizes at high volumes, the Wood Stone FIREDECK9690 Stone Hearth Deck Oven (WS-FD-9690) has a 39-square-foot cooking surface that can accommodate 25 12-inch pizzas at once. Its underfloor infrared burner regulates base temperatures even at full capacity; while its 60-inch doorway provides a clear view of its live fire and cooking chamber. For extended durability throughout rigorous use, it has a steel frame and a tensioned steel exoskeleton surrounding its monolithic, cast-ceramic hearth. To complement existing equipment, its top, sides, front, and back are finished with galvanized steel, and its base is painted black.
For versatile cooking, the Wood Stone FIREDECK9690 stone hearth deck oven can be operated with gas, wood, or a combination of both. It has a 12-inch flue collar for ventilation and a radiant flame wall for an aesthetically pleasing heat source; to preserve generated the burners' temperatures, its tensioned steel exoskeleton is insulated with spun ceramic fibers. Overall, this unit measures 96 1⁄4 inches wide by 97 1⁄2 inches deep by 87 3⁄4 inches high, and to simplify setup, it includes a set of casters that should be removed once installed.
