Duke 59-E3XX/PFB-1 Description

The Duke 59-E3XX/PFB-1 electric proofer oven has a proofing cabinet in its base. This compartment has a stainless steel front, back, sides, and cavity. As many as 16 pans can fit inside the cavity and a water reservoir creates steam that surrounds dough with moisture as it proofs.

Once dough has been proofed, it can be baked in the Duke 59-E3XX/PFB-1 electric proofer oven's convection oven top. This oven heats products with air, rapidly circulated by a two-speed fan, for quick, consistent cooking. Users can set the temperature to a level from 200 to 500 degrees Fahrenheit.
