Employees can adjust its temperature from 200 to 500 degrees Fahrenheit using solid-state infinite controls, and to minimize heat loss, it's built with solid mineral fiber insulation in its back, top, bottom, and sides. Overall, this single-deck model measures 38¹⁄₄ inches wide by 36⁷⁄₈ inches deep by 57 inches high.

For long-term rust and corrosion resistance, the Blodgett ZEPH-200-E SGL convection oven's front, top, and sides are made of rugged stainless steel, and for additional durability, it features a full angle-iron frame. Each of its five chrome-plated racks accommodates an 18-inch by 26-inch pan and can be adjusted to 11 possible positions. To improve visibility for monitoring, it's equipped with interior oven lights. This unit is raised on 25-inch legs that are also constructed of strong stainless steel.
