The simplest KitchenAid pasta attachment is the KPSA pasta roller. This tool rolls pasta dough into thin, wide sheets that can then be cut by hand into noodles for ravioli or lasagna, or sent through one of the available pasta cutters. Eight thickness settings give cooks fine control over how the pasta comes out.
KitchenAid's two pasta cutter attachments come together in the KPCA attachment set. A lasagnette cutter creates thicker noodles, suitable for fettuccine and egg noodles. The capellini cutter creates thinner spaghetti or angel hair noodles. For best results, dough should be rolled out with the pasta roller attachment before being sent through either pasta cutter.

Starting with a folded sheet of dough that's been rolled through the KitchenAid pasta roller, chefs scoop their homemade ravioli filling through the included hopper and, powered by a hand crank, the attachment creates perfectly-formed perforated sheets of ravioli squares that can easily be separated by hand and cooked immediately or frozen and kept for later.
