This True TSSU-27-08-HC sandwich and salad prep table has a refrigerated base that keeps contents cool by moving R290 hydrocarbon refrigerant through its capillary tube system, ensuring a set temperature between 33 and 41 degrees Fahrenheit. Because the evaporator fan's large blades distribute air, the cabinet and top pan compartment are cooled evenly. To properly maintain cool product temperatures, a self-cleaning feature along with routine maintenance keeps the condensing coil operating efficiently. Each time the compressor starts, the fan motor reverses to remove dirt, debris, and dust from the coil. A clean coil also helps to lengthen the unit's lifespan.

An insulated lid covers the eight sixth-size included food pans, retaining cold air and protecting toppings from contaminants. Running the length of the unit, a polyethylene cutting board offers a space to prepare ingredients, sandwiches, and salads. To facilitate product stocking, the door remains open past 90 degrees and automatically closes if opened less than 90 degrees. It has a stainless steel exterior and an aluminum liner to match the interior, while a one-piece, magnetic gasket seals the door to the frame, preventing cold air from seeping out. For comfort, the door is equipped with a 12-inch, recessed handle.

Inside the cabinet, additional product is stored on two PVC-coated, adjustable shelves. Its aluminum liner resists corrosion, while the coved corners in the stainless steel floor ease cleanup. Mobility is provided by castors—two of which have brakes to lock the unit in place.
