Traulsen UPT279-L Description
The Traulsen UPT279-L prep table comes with nine sixth-size, 4-inch-deep pans and holds sandwich and salad ingredients in an accessible position so users can assemble meals on the cutting board. Although they are not included, pans as deep as 6 inches can fit in the pan opening. Dividers and a reinforced pan ledge that keeps the pans level are included, and an insulated cover and lid assembly protects the pan compartment from contaminants while retaining cold air. Because the lid pivots, users can open and close it smoothly.
In the cabinet base, two steel shelves hold stored product; the powder coating on these shelves provides corrosion resistance. Left hinged and self-closing to trap cold air, the door stays open past 105 degrees so users can load product and clean the interior. Using R290 hydrocarbon refrigerant, the Traulsen UPT279-L compact prep table maintains temperatures between 34 and 38 degrees Fahrenheit. Operators have control over this level, so the unit can run at a setting that works best for specific products.
