Its top section is protected by two insulated, removable stainless steel covers to ensure the contents of all (24) 4-inch-deep pans remain safe for consumption. The included adapter bars raise the pans above the cool surface and are used in conjunction with the 60-inch-wide cutting board to craft Southwestern salads and grilled chicken sandwiches. Below this section are two spring-assisted doors that are designed to stay open past 90 degrees and automatically shut with magnetized gaskets when cooks are done gathering ingredients from the 14.8 cubic foot back stock cavity. Two adjustable shelves divide this space and streamline workflow, while two of four 6-inch casters lock with brakes to keep this unit stationary.
