Vulcan 72SS-8B24G Description

To save space in kitchens and eliminate the need to purchase individual pieces of cooking equipment, the Vulcan 72SS-8B24G Endurance™ natural-gas-powered restaurant range measures 72 inches wide by 34 inches deep by 58 inches tall and features eight open-top burners, a 24-inch-wide griddle, and two standard ovens. Its front, sides, backriser, and lift-off high shelf are made of durable, rust- and corrosion-resistant stainless steel, while its fully MIG-welded frame is aluminized steel for additional strength. So this unit remains stable on uneven surfaces, its 6-inch legs can be raised or lowered. This 350,000-BTU range operates with natural gas, uses a 1-inch rear gas connection, and includes a rear manifold and pressure regulator.

The 72-inch-wide surface features burners on the left side with a griddle on the right side. The eight burners are powered with four shrouded flashtube pilot systems to minimize gas consumption. To adjust burner heat, staff members can rotate the cool-to-the-touch burner knobs. Each burner outputs 30,000 BTUs per hour and includes a lift-off head, heavy-duty cast grate, and aeration bowl for enhanced efficiency. While the four rear cast grates measure 12 inches by 14 1⁄2 inches to support large cookware, the four front grates are 12 inches by 12 1⁄2 inches to accommodate small- or medium-size cookware. To ease cleaning, the grates can be lifted off and the crumb tray pulled out.

On the surface's right side, the griddle spans 24 inches, providing ample space for cooking proteins, pancakes, or eggs. Its 7⁄8-inch-thick plate is durable enough to endure high-volume heating and cooling, and to reduce rebound time, the surface retains generated heat. Users can easily modify the unit's surface heat with the manual controls. When residual oil needs to be removed, operators can access the 4-inch-wide front-mounted grease trough.

The two ovens beneath the Vulcan 72SS-8B24G commercial range's top section can both be set from 250 to 500 degrees Fahrenheit to accommodate various baking requirements. These ovens rely on radiant heat to broil, roast, and bake products uniformly. Each baker's-depth oven measures 26 3⁄8 inches wide by 27 inches deep by 14 inches high, accommodating 18-inch by 26-inch pans side to side or front to back. The ovens' two included racks can be placed in four different positions to achieve desired results, and because their doors are hinged and feature cool-to-the-touch handles, they simplify loading and retrieving pans. For simplified cleaning, their door panels and bases are made of porcelain.
