Vulcan 36S-36GT Description
To provide convenient storage and enable staff to perform different cooking tasks, the Vulcan 36S-36GT Endurance™ LP-gas range features a lift-off high shelf, a 36-inch-wide griddle, and a standard oven. This 36-inch-wide by 34-inch-deep by 58-inch-tall unit's front, sides, and backriser are made of stainless steel—a durable metal that resists rust, scratches, and dents and is simple to wipe clean. For additional strength, its chassis is fully MIG welded. So it doesn't wobble or rock as the oven door is opened or closed, it's mounted on four legs that can be raised or lowered to level the unit on uneven surfaces.
Great for broiling, baking, and roasting, the oven's temperature can be adjusted between 250 and 500 degrees Fahrenheit. It includes two racks and two rack guide sets, and the interior features four possible rack positions. Because the 263⁄8-inch-wide by 27-inch-deep by 14-inch-high interior cavity is baker's depth, it accommodates full-size food pans inserted front to back or side to side. To endure high heat and ease cleaning between uses, the base and door panel are made of porcelain.
The Vulcan 36S-36GT restaurant range's top section features a 3⁄4-inch-thick griddle plate that withstands rapid heating and cooling and retains heat to reduce lag time. Staff can adjust the surface temperature with the snap-action thermostatic controls. To protect adjacent surfaces from popping oil, the griddle's sides and back are encased with splash guards. After use, residual grease can be removed from the 4-inch-wide grease trough at its front, and crumbs and food debris can be extracted from the extra-deep pull-out crumb tray.
