Vollrath 407312 Description
The Vollrath 407312 Cayenne® charbroiler comes with radiant and lava rock kits for flexible heating and is powered by natural gas; for establishments with propane fuel, it also comes with a propane field conversion kit. Its fully welded stainless steel and aluminized steel construction offers rust resistance and enhanced durability, and this unit measures 36 inches wide by 27 inches deep by 17 1⁄2 inches high, overall. The cast iron grill plates can be reversed, featuring narrow channels on one side for most foods and flatter surfaces on the latter for more delicate selections. This 35 11⁄16-inch-wide by 19-inch-deep cooking surface features six stainless steel burners spaced every 6 inches for even heat distribution.
To protect users from burns, the Vollrath 407312 charbroiler has a cool-to-touch bullnose front. Its backsplash and sides are raised to minimize splatter, and for streamlined cleaning, excess oil is collected in the drip tray, which can then be removed for grease disposal. For simple temperature adjustments, staff can rotate the metal knobs which are attached to the gas valves. Designed for use on countertops, this unit is mounted on 4-inch legs that can be raised or lowered as needed. This unit should be installed with a 6-inch clearance on all sides for safe operation.
