Because of its large, 40-gallon capacity, the Cleveland SEL40T1 PowerPan™ tilting skillet is designed to support high-volume batch cooking. The pan's griddle-like surface increases versatility, so the unit can be used for braising, boiling, pan frying, grilling, and steaming product. Inside the pan, gallon and liter marks support ingredient measuring for consistent recipe cooking, while the cooking surface has a nonstick, bead-blasted finish and measures ⁵⁄₈ inch thick. Made of stainless steel, the plate evenly distributes heat, and operators can set the temperature between 100 and 450 degrees Fahrenheit on the adjustable, electronic thermostat.

To conveniently empty the contents, operators can tilt the Cleveland SEL40T1 braising pan with the manual hand crank. Turning the crank tilts the pan up and down, and this mechanism is less efficient and accurate than power units but is more reliable and affordable. The unit shuts down when it is tilted past 10 degrees for safety, but under 10 degrees, it continues to operate, providing angled cooking and grease draining. Spring assisted for comfort, the cover has a full-width handle.
