Sustainable Caviar: Would You Eat It?

Caviar is a delicious treat for many, however some refused to eat these eggs for the simple fact that in order to harvest the eggs, the sturgeons had to be killed before the eggs were taken. However, a new harvesting method is creating quite the buzz, making caviar a sustainable delicacy.
Mottra, a new caviar producer, has begun using a massage method to remove the eggs from the sturgeons to eliminate the need to kill them. The eggs are massaged out of the sturgeon through an incision in the lower abdomen, which is much more humane than the older caviar collection methods. This company farms sturgeon in Riga, Latvia, where the eggs are extracted. After the extraction, the fish are allowed adequate time to heal before next year's harvest begins.
