Seasonal Asparagus in East Tennessee

April is National Gardening Month which is inspiring many chefs to shop seasonally and prepare local organic foods. Local produce provides a fresh taste and ensures the health and quality of food.

In many regions of the country, including KaTom's home in East Tennessee, asparagus is now in season which means not only an opportunity to shop seasonally and support local growers, but an opportunity to buy asparagus cheaper that $4.00 per pound. Asparagus is easy to cook, tastes best simply prepared and requires minimal or no cooking, making it a great choice for a quick side dishes or salads. Admirers of asparagus can rejoice this April.

Prosciutto Wrapped Asparagus

Prosciutto Wrapped Asparagus


  • 1/2 pound prosciutto, sliced
  • 1/2 (8 ounce) package goat cheese
  • 12 spears fresh asparagus, trimmed


Preheat oven to 450 degrees F

Spread prosciutto slices with goat cheese. Wrap slices around 2 or 3 asparagus spears. Arrange wrapped spears in a single layer on a medium baking sheet

Bake 15 minutes in the preheated oven, until asparagus is tender.
