Leftover Turkey: Now What?

If your family is anything like my family, you probably have a great deal of leftover food from your Thanksgiving celebration. Turkey is the main staple of just about any Thanksgiving dinner, and therefore is typically what has the most leftovers. Once the big dinner is over, the question of what to do with all of the leftover turkey meat seems to come into play. There are numerous ways to reuse turkey the next day - you can find a myriad of recipes on the internet.

Two of my favorite ways to use leftover turkey is to make it into either quesadillas or a stir fry dish. Both dishes are fairly easy to create; I'll include the general process for each at the end of the blog.

To create Turkey Quesadillas:

Spray frying pan with cooking spray and place one tortilla on the bottom, add turkey, jalapenos, cheddar and jack cheese and top with another tortilla. Cook on low for a couple of minutes and flip and cook for another couple of minutes until turkey is cooked and cheese is melted. Cut into fourths and serve.

To create Turkey Stir Fry:

Chop up green and red peppers and a few onions. Warm leftover turkey in with peppers and onions while they are cooking. (Add A-1 sauce for a little additional flavor!) Serve over cooked white rice.
