BananaPancakes Banana Pecan Pancakes
  • 1 cup self rising flour
  • 1 cup whole wheat flour
  • ¼ cup wheat germ
  • 1 banana diced
  • ½ cup chopped pecans
  • 2 eggs
  • 1 ¼ cups milk
  • 3 tbsp raw sugar
  • 4 tbspolive oil

In a medium bowl, mix white flour, wheat flour, wheat germ, and sugar. Add in eggs and oil, milk, and combine. Add banana and pecans. Combine.

Let mixture sit for 20-30 minutes to allow CO2 bubbles to maximize. (CO2 is what causes the “bubbles” when pancakes cook. It makes the pancakes nice and airy.

Onto seasoned or nonstick griddle heated to 300 degrees, pour approximately half a cup of pancake batter. When the edges are golden brown and bubbles are forming on the top, turn pancake and cook other side until golden brown.

Serve with bananas and pecans on top.
