Chorizo and Vidalia Onion Sandwiches with Pasta Salad
Mexican chorizo is a spicy sausage made from pork and seasonings. It can be and commonly is eaten in tacos, with scrambled eggs and potatoes, as a replacement to ground beef or pork in recipes. This recipe features chorizo as the tasty star in a sandwich. Pair it with a whole wheat pasta salad with vegetables to balance out the meal.
Chorizo Vidalia Sandwiches- 3 chorizo links
- 2 thinly sliced Vidalia onions
- French bread slices
- 2 tbsp olive oil
Carefully cut chorizo lengthwise into halves, and remove casing. In a medium skillet over medium high heat, add olive oil and cook chorizo for approximately 10-15 minutes or until almost cooked through. Add onion and sauté until onions have cooked down and chorizo is completely cooked through.
Place chorizo and onions on bread. Makes 4-5 sandwiches.
Ensalada de Pasta con Verduras (Pasta Salad with Vegetables)
- 1 box whole wheat pasta
- 1 carrot thinly sliced
- 1/2 cup green onions thinly sliced
- 2 cloves garlic finely chopped
- 1/2 cup grape tomatoes halved
- Salt and pepper to taste
- Vinaigrette dressing to taste (I used World Classics, 3 cheese Italian style dressing.)
Cook pasta according to package directions. When pasta is cooked and cooled, move to a medium mixing bowl and add vegetable, seasonings, and dressing. Makes about six servings.
