Choosing the Right San Jamar Cutting Boards

Since its creation in 1984, San Jamar has provided commercial foodservice businesses with safe, sanitary products for their restrooms and kitchens. Today, the company offers a variety of cutting board options designed to be durable and functional, designed with features to prevent cross-contamination and make cleaning easier. You can learn more about San Jamar cutting boards below.
Standard San Jamar Cutting Boards
If you're searching for functional, reliable cutting boards without some of the advanced features available on other San Jamar cutting boards, the company's Cut-N-Carry line may be the right choice for you. These boards are made of a co-polymer material that is easy on knives but durable enough to be cleaned and sanitized in commercial dishmachines without warping. These also include integrated rulers to aid cooks in prepping consistent portions.
San Jamar Cut-N-Carry boards are named for the patented Food Safety Hook molded into one corner, a design meant to improve sanitation by allowing users to transport the boards without grasping them by their cutting surfaces, then hang them for storage. Cut-N-Carry boards are available in blue, brown, green, red, white, and yellow, the main colors used in HACCP systems to prevent cross-contamination. If you want to install your own HACCP cutting board system, these can be purchased separately or in predetermined four- and six-board systems that include charts for communicating the color-coding system to your employees.
San Jamar also offers white grooved cutting boards. Although these lack the Food Safety Hook, deep grooves near the edges of the cutting boards are intended to prevent cross-contamination by collecting juices that would otherwise spill onto surfaces beneath the boards. Cut-N-Carry and grooved cutting boards are available in 1⁄2-inch and 3⁄4-inch thicknesses with dimensions ranging from 10 inches by 12 inches to 18 inches by 24 inches.
San Jamar Saf-T-Grip Cutting Boards
Cutting boards in the Saf-T-Grip line are also made of a co-polymer material and designed with the sanitary and convenient Food Safety Hook, but they are set apart by another feature: anti-slip grip corners. These grip corners are molded through the cutting boards, so they can prevent the boards from sliding around on countertops when food is being prepped. This allows cooks to focus on food prep and abandon the unsanitary practice of placing a damp towel under a cutting board to hold it in place. The integrated ruler also helps ensure consistent portion sizes.
Saf-T-Grip cutting boards are available in HACCP colors, though you have two options: white cutting boards with colored grips and colored cutting boards with colored grips. In addition to the six HACCP colors you would expect, Saf-T-Grip boards are available in black and in Saf-T-Zone purple to signify a cutting board that should not be used to prep potential allergens.
Saf-T-Grip bar and snack boards measure 6 inches by 9 inches with a 3⁄8-inch thickness. Other cutting boards in this line may have a 3⁄8- or 1⁄2-inch thickness with dimensions as large as 18 inches by 24 inches. San Jamar also offers a Saf-T-Grip six-board system that includes blue, brown, green, red, white, and yellow cutting boards, with an accompanying color coding chart.
San Jamar Tuff-Cut Cutting Boards
Although Tuff-Cut cutting boards appear to be made of wood, they are actually formed with a proprietary resin composite. They can withstand temperatures as hot as 350 degrees Fahrenheit, and can be cleaned and sanitized in commercial dishmachines. Because these cutting boards will not be damaged by serrated blades, they are great for kitchens where staff members frequently cut steaks or slice bread. If you will use Tuff-Cut boards for meat carving, you may wish to invest in a grooved cutting board to prevent juices from dripping onto the counter. The Tuff-Cut line includes bread boards with 4-, 5-, or 6-inch handles that allow for the boards to be carried and used in bread service, as well as prep.
These San Jamar cutting boards are 1⁄2-inch thick and may measure from 12 inches by 18 inches to 18 inches by 24 inches; bread boards may be 1⁄4- to 3⁄4-inch thick, with measurements of 7 inches by 9 inches or 81⁄2 inches by 61⁄2 inches.
Custom Tuff-Cut cutting boards, which can be made to your thickness and size specifications, are also available.
San Jamar Cutting Board Accessories
To ensure you can get the most out of your cutting boards, San Jamar also offers a few essential accessories:
- Saf-T-Grip Board-Mate: If your kitchen will rely on Cut-N-Carry cutting boards, you may wish to invest in Board-Mate grip pads. Since the Cut-N-Carry boards do not have anti-slip grip corners, this accessory can be used to keep them in place during use. These come in three sizes – 10 inches by 16 inches, 13 inches by 18 inches, and 16 inches by 22 inches – so they are compatible with most commonly sized cutting boards.
- Cutting board storage: San Jamar offers two options for sanitary cutting board storage: a stand or a hanging rack. The cutting board stand is an upright rack with non-slip feet that can hold as many as six cutting boards with maximum thicknesses of 3⁄4 inch each. The shelf-mounted hanging rack can be used to store four Cut-N-Carry or Saf-T-Grip cutting boards at a time.
- Color-coded smart chart: If you wish to have additional color charts for your HACCP cutting board system on hand, San Jamar color charts for four- and six-board systems can be purchased separately.
