Bussing
The first step in an efficient warewashing system is collecting soiled dishes and transporting them to the dishroom. Carlisle's bussing equipment can help you gather, sort, and transport dishware, drinkware, and flatware.
Bus Boxes

Bus boxes are durable plastic containers made to carry everything from the dining space to the warewashing area. These are available in multiple colors. The most common bus boxes have one large section, but some have as many as four compartments for sorting small items like flatware. Bus box lids are available that can be used for keeping dirty dishes hidden away and for allowing clean bins to be used for storage. Bus boxes have handles on either end to facilitate carrying, and are sized to be easily transported on most bus and utility carts.
Flatware Carriers

The simplest flatware carriers from Carlisle are silverware bins designed to hang on the sides of bus boxes. These allow bussers to separate flatware from plates and glassware at the beginning of the bussing process. From there, the utensils are often placed in the Carlisle Perma-Sil™ Flatware Cylinder, which can be used independently or in a wire flatware carrier that holds as many as six cylinders. These cylinders are a popular way to wash, store, and distribute flatware.
Carts

While both bus boxes and flatware carriers are constructed with handles for easy lifting, they are traditionally used with bus and utility carts. Using carts enables employees to transport as many as three boxes at a time, so they can clear off more tables before having to drop off the dishes. This additional room also means more space for organization, which can be used to separate specific pieces of tableware to cut time required for that task in the dishroom. Carts can be open or enclosed, with two or three levels.
Warewashing Brushes
Once all the dirty dishes have been returned to the dishroom, it's time to prep them for washing. In many cases, a simple rinse will do, but sometimes a little more help is needed. Carlisle kitchen brushes include several intended to help scrub cooked-on food, while others are geared toward cleaning specific pieces. The wares used in your facility will dictate which brushes you need.
- Bottle Brushes have rounded brush heads on long handles, and can enable employees to thoroughly clean long and/or slender wares like pitchers, bottles, airpots, and tall cups. Some bottle brushes are bent at angles that make it easier to scrub the interior sides of the wares.
- For coffee and wine decanters, many of which have thin necks and wide, bulbous bases, decanter brushes are helpful in reaching those dramatically curved side walls. These brushes have handles of varying lengths, but the brushes are all a wide C shape, allowing them to conform to the curves of the containers.
- A basic scrub brush can be used to remove baked-on food from pans and dried foods from serving items, though ideally those should be washed long before the food has had time to dry and become hard to clear.
- Specialty brushes for items like waffle irons and vegetable cutters are shaped to help clean specific pieces of equipment.
Dish Racks

Glass racks from Carlisle may have less than 10 or as many as 49 compartments to accommodate drinkware of all widths. Extenders can be used to prevent glasses from knocking together and becoming damaged during washing. Those are available in a variety of colors, so employees in operations with multiple glass types can easily identify which rack they need by color.
Open and peg racks are also available for washing larger items like pots, pans, plates, and bowls. Some operators prefer to wash flatware in open racks, but flatware baskets are also available with and without handles.

Dishwashing Gloves

Dishwashing gloves helps take some of the heat off employees who work in hot water for extended periods of time and can protect them from chemicals that may be part of the dishwashing process. These gloves, usually made of nitrile or neoprene, are elbow length for maximum protection. Nitrile is thinner and allows for easier maneuvering, but is only rated to provide resistance for temperatures below 185 degrees Fahrenheit. Neoprene is a bit thicker and usually more textured, so it provides a better grip and is heat resistant to 350 degrees Fahrenheit.
Dishwashing Aprons

Dishwashing aprons help protect employees and their clothing from grease, debris, and hot water splashes. Reusable dishwashing aprons are made of varying thicknesses of vinyl or neoprene, while disposable versions are available in lightweight polyethylene.
