Designed for high-volume salad and sandwich production, the True TSSU-72-30M-B-ST-FGLID-HC food prep table measures 72 5⁄16 inches wide and 38 1⁄8 inches tall. Constructed of stainless steel, the front, sides, and top are heavy duty, and its steel back is coated in corrosion-resistant GalFan. The cabinet base has a durable, clear-coated aluminum interior liner and a stainless steel floor with coved corners, eliminating debris-trapping crevices. Coated to resist corrosion, this base section has six adjustable shelves that are made of wire to encourage air circulation around products.
Equipped with 30 sixth-size, 4-inch-deep pans, this True TSSU-72-30M-B-ST-FGLID-HC prep table holds ingredients close to the cutting board so salads and sandwiches can be assembled. These pans are covered by a flat glass lid that protects against contaminants and traps cold air inside without limiting visibility. The unit operates at a set temperature between 33 and 41 degrees Fahrenheit, which can be selected and controlled by the user. Designed to keep the condensing coil free of excess debris and dust, the compressor fan motor has a reverse mode for 20 seconds upon start up. This unique feature keeps the refrigeration system running efficient to prolong its llfespan, but it doesn't replace routine maintenance recommendations.
