The refrigeration system in the True TSSU-72-18M-B-HC food prep table has a forced-air design that keeps the temperature consistent in the cabinet base and pan compartment. Operators can set the temperature to run between 33 and 41 degrees Fahrenheit, which is maintained with environmentally friendly R290 hydrocarbon refrigerant running through self-contained capillary tubes. To create efficient airflow with a low velocity, this unit has large fan blades and a sealed, self-lubricating evaporator fan motor, and the condenser slides out of the cabinet's back for convenient service access.

Compliant with ADA, this True TSSU-72-18M-B-HC prep table has a 34-inch work surface height. In the pan area, it comes with 18 sixth-size, 4-inch-deep pans, but 6-inch-deep pans can also fit in this section. The removable polyethylene cutting board enables users to prep ingredients in the food pans and assemble salads and sandwiches, while additional products can be stored in the refrigerated cabinet base.

Upon compressor fan start up, the motor works in a reversing motion for 20 seconds to blow dirt, dust, and debris off the condenser coil. Because the coil is cleaned using a unique feature, the unit runs more efficiently and reduces energy consumption compared to systems that run with dirty components. Although this self-cleaning feature prolongs the unit's lifespan, it doesn't eliminate recommended routine maintenance and cleaning.
