The True TSSU-72-30M-B-ST-HC prep table uses environmentally friendly R290 hydrocarbon refrigerant to maintain cold temperatures, which can be set by the operator to run as low as 33 degrees Fahrenheit or as high as 41 degrees Fahrenheit. Coated in epoxy, the evaporator is resistant to corrosion, and users can access the condenser from the rear for maintenance since it has a convenient slide-out design. This system has a self-cleaning feature that keeps excess dust and debris knocked off the condensing coil. Upon start up, the compressor fan motor reverses for 20 seconds to blow these particulates off for efficient operation with reduced energy use. Despite this feature improving efficiency, it doesn't eliminate maintenance and cleaning recommendations.

Because this sandwich and salad prep table is a mega-top unit, it is deeper than standard units to create space for an additional row of pans. It comes with 30 sixth-size, 4-inch-deep pans made of polycarbonate, and if used with pan adapter bars, the compartment can hold any pan configuration with pans as deep as 6 inches. Retaining cold air, a hood and lid assembly cover the top pan section to maintain freshness and prevent built-up condensation. An 8⁷⁄₈-inch-deep cutting board spans the length of the front, providing prepping space for ingredients and assembly space for salads and sandwiches.
