In the Vulcan SX36-6BP restaurant gas range, one pilot provides heat to two burners simultaneously using a shrouded, flash-tube system that preserves energy and reduces overall gas usage. Operators can adjust the six 28,000-BTU open-top burners using the high-temperature T knobs. When they require maintenance or cleaning, operators can remove the burner heads. Aeration bowls built into the six 12-inch by 12-inch cast-top grates direct heat upward, improving heat transfer efficiency. While a stainless steel backriser protects the wall from splashes and popping oil, a high shelf provides a convenient space to store ingredients and equipment.
On the Vulcan SX36-6BP gas range's bottom section, a standard 30,000-BTU oven can be adjusted from 250 to 500 degrees Fahrenheit using the thermostat. This 263⁄4-inch-wide 26-inch-deep by 133⁄4-inch-high cavity includes an oven rack and four rack positions to achieve various results. Its compression spring door hinge system opens smoothly, and the porcelain bottom and door liner are simple to wipe clean. Elevated with 6-inch adjustable stainless steel legs to prevent rocking on irregular flooring, this stainless steel unit measures 36 inches wide by 32 inches deep by 58 inches high overall.
