This Shun SWT0743 Kanso boning knife's curved, rigid blade is constructed of corrosion- and wear-resistant AUS10A high-carbon steel for lasting strength when carving pork and beef, and added vanadium creates a sharp, 16-degree edge on both sides. For a dense feel and aesthetically pleasing look, this 6 1⁄2-inch-long fillet knife's contoured handle is made of tagayasan wood—also known as wenge wood. With its full tang and comfortable grip, it provides lasting durability and can help improve control over slicing.
