The Groen TDB-40C steam-jacketed kettle has a self-contained steam source, so it does not need to be hooked up to a boiler or generator. It comes filled with water in the jacket, which heats up to turn the water into steam. Surrounding the lower two thirds of the kettle body, this jacket provides a more even heat than cooking on a range. The kettle operates at temperatures between 150 and 295 degrees Fahrenheit, a level that can be controlled through a knob on the control panel.

Operators can quickly remove cooked food from this Groen TDB-40C countertop kettle by tilting the body. It tilts smoothly when the hand crank is turned and locks into whatever position the user chooses. Because the rim can get damaged during the tilting process, it is reinforced to prevent denting, which could alter steam pressure. A welded-in pouring lip directs product out of the kettle and into a separate container when it is tilted. If the unit is tilted to or past 12 degrees, the heat shuts off to protect operators from burns. A faucet can be added to this kettle using the included bracket, providing a constant supply of water. Single-pantry faucets can offer hot or cold water, and double-pantry faucets provide both.
