The Cambro UPCH400110 Camcarrier® heated pan carrier provides gentle heat from 150 to 165 degrees Fahrenheit, keeping product hot and at safe temperatures while maintaining moisture and ensuring it does not continue to continue to cook. It only takes 3 minutes to recover the temperature after a door is opened and closed, and foamed-in insulation keeps temperatures above 148 degrees for 4 hours when the unit is unplugged. A vent cap is built in, so steam can be released to equalize pressure and prevent product from getting soggy. There are 12 molded-in rails inside the Cambro UPCH400110 Camcarrier heated pan carrier that hold full-size, half-size, and third-size pans, as well as half-size sheet pans.
