Cleveland SEL30TR Description
Holding as much as 30 gallons, the Cleveland SEL30TR DuraPan™ tilt skillet is made to support high-volume batch cooking, and it can be used for virtually anything such as pan frying, grilling, braising, searing, steaming, and more. A unit like this is often used institutionally in schools and hospitals, but its versatility also works well in restaurants. Running efficiently with quick heat-up and recovery times, this skillet operates at temperatures between 100 and 425 degrees Fahrenheit—a level that the user can adjust on the electronic thermostat.
The pan in this Cleveland SEL30TR tilting skillet has coved corners that eliminate cracks, preventing debris from getting stuck. To accurately measure ingredients as they are added, the pan has gallon and liter measurement marks, while the cooking surface is clad with stainless steel and is 5⁄8 inch thick to consistently distribute heat. The unit can be tilted with the hydraulic mechanism to empty food after it is cooked, and as the pan tilts, the pour lip directs food into a container placed below without splashing.
