AccuTemp ALLGB-40 Description
The Accutemp ALLGB-40 Edge Series™ stationary steam kettle is powered by LP gas with an electronic ignition. It holds 40 gallons of product at a time and its temperature can be adjusted from 150 to 260 degrees Fahrenheit. Made of stainless steel, this kettle is resistant to warping and rusting.
This Accutemp ALLGB-40 steam kettle has a steam jacket around two-thirds of its cooking section; this cooks food from all sides with even heat that prevents hot spots. This jacket is self-contained, so it doesn't require an external steam source. A layer of insulation between the steam jacket and exterior liner prevents chamber heat loss from heating the exterior surface to dangerous levels.
