Understanding Finex Cast Iron Cookware

In 2019, Mike Whitehead noticed modern cast iron cookware didn’t measure up to the quality of antique pans and wanted a product that more closely resembled traditional cast iron. Based in Portland, Ore., Finex crafts functional and durable cast iron cookware similar in quality to antique skillets, Dutch ovens, and pans for gourmet chefs in upscale establishments. In this article, KaTom highlights the Finex product line, recommended cleaning procedures, and how to purchase Finex cast iron cookware.

Finex Cookware: The Basics

KaTom offers several products from the Finex line including octagonal skillets, skillet lids, Dutch ovens, square grill pans, and a 3-piece cast iron care kit. As with most cast iron cookware, Finex products come pre-seasoned, though it’s recommended to use more oil than usual the first few times you cook with your new pan to build up the seasoning.1 Finex also recommends holding off on cooking acidic foods, such as tomatoes, lemons, and sauerkraut, for the first few uses. With repeated use, the pan's seasoning will darken to a glossy black color and develop a more cohesive layer.

Finex Octagonal Cast Iron Pans

Finex octagonal pan

Unique to the Finex brand, the octagonal cast iron pan is available in sizes ranging from 8 to 12 inches in width. The octagonal design helps simplify lifting food out of the pan while creating pour spots that can be used to smoothly transfer batter, oil, or other substances from the pan. Finex octagonal cast iron pans feature a stainless steel spring handle that cools down quickly; it features a polished end cap and helper handle on the other side of the pan.

Finex Cast Iron Lids

Finex lid

Finex manufactures lids that are compatible with the brand's octagonal skillets and Dutch ovens. These lids have a heavy inner lip that fits inside the cookware as well as integrated steam vents and dual basting rings, which help collect moisture. The lids also feature rim rests that reduce rattling as food boils. On top of the lid, there's a hand-polished decorative knob that operators can grab for easy, safe lifting.

Finex Dutch Ovens

Like the octagonal skillets, the Finex Dutch ovens feature eight sides and pour spots. This Dutch oven features two stainless steel handles that stay cool to help staff serve hot dishes to customers in a safe manner. While Finex Dutch ovens typically come with a lid, an additional lid can be purchased.

Finex Square Grill Pan

Finex's square grill pans are available in two variations: with an ergonomic handle or with dual handles. Great for cooking steaks and chicken, these pans feature raised ribs 58 of an inch apart to create cross-hatched grill marks and drain juices from the meat.

Cleaning Finex Cookware

Finex recommends cleaning its cookware immediately after use as these pans are easier to clean while they’re still warm. Soaking the cookware or placing it in a dishwasher is not recommended as these cleaning processes can cause cast iron to rust. The Finex 3-piece care kit is the best way to clean any cast iron product in the company's product line; this care kit includes a chain mail scrubber, an oak wood scraper, and 100-percent-organic flaxseed oil. The scraper and scrubber should be used carefully to remove food residue, then wiped dry and buffed with a light layer of flaxseed oil.1
