Cambro food carriers have long been the go-to for caterers and event organizers who need to keep food at safe temperatures, to the point that the name "Cambro" is erroneously used by many to refer to any food carrier. That's not surprising, considering the company has been providing quality products to the foodservice industry since 1951. One of Cambro's newest offerings, the Cambro Pro Cart Ultra, goes beyond the traditional food carrier caterers have relied on for so long, giving operators who need to transport food a versatile option.

Cambro Versatility

The biggest appeal of the Cambro Pro Cart Ultra is its versatility. It can have one or two vertical sections, and each can be passive, heated, or cooled.

  • Passive sections have polyurethane insulation throughout the entire cabinet and the door. Even without electricity, passive sections can retain hot or cold food temperatures for at least 4 hours. A digital thermometer operates on solar power, so you can always see the internal temperature displayed.
  • Cold sections make use of thermoelectric cooling, meaning no compressor is necessary. At an ambient temperature of 73 degrees Fahrenheit, a cooled section takes 90 minutes to chill to 40 degrees Fahrenheit. The interior temperature can be set from 32.5 to 40 degrees Fahrenheit, and it takes only 10 minutes to recover that temperature after the door is opened for 30 seconds.
  • Heated sections can be set from 150 to 165 degrees Fahrenheit, and have a preheat time of only 45 minutes.

While the ability to order the Cambro Pro Cart with two cold compartments, two hot compartments, or one hot and one cold is impressive, it's the unit's adaptability that sets it apart. The components that make these sections into heated or cooled compartments are called modules, which can be changed out easily. That means you can order a unit with two cold compartments and, if your menu changes later, can switch out one of those modules for a hot module. They are made to be changed out quickly, with most switches taking only 5 minutes.

The ability to easily change these modules is beneficial to any foodservice operation that may experience menu changes due to seasonal availability or fluctuating trends. Because the unit can also be bought initially as a passive unit, it gives operators on a tight budget the option to purchase the passive unit and then buy the hot and cold modules later as their budget allows.

In addition to the flexibility of being able to change hot and cold modules as needed, the Cambro Pro Cart Ultra is made to be durable and easy to use. Food can be held in full-size or fractional pans, which are supported on stainless steel universal slides. Each compartment can hold eight full-size sheet pans, (10) 4-inch-deep hotel pans, or eight pizza boxes.

Stainless steel hinges ensure durability for a long life, as they won't rust or corrode. They allow the doors to open a full 270 degrees, so they won't get in the way while pans are being loaded and unloaded. The doors have magnets for quick closure, while 4-inch nylon latches secure the door tightly during transport; they can also be locked to keep food secure. No gaskets are used on the doors, so you have fewer parts to clean and replace.

A menu pocket on the front of each door makes it easy to identify what is stored inside. You can slide a card inside or write directly onto the surface with a grease pencil. Heavy-duty, non-marking, 6-inch casters enable smooth movement. For high-security operations such as prisons, an optional security package is available that includes non-removable doors and tamper-resistant fasteners.
