
Baking with Cadco Bakerlux Ovens
Cadco is known across the foodservice industry for its various models of cooking equipment, including its line of countertop convection ovens Bakerlux™. Due to their compact countertop design and user-friendly digital controls, these ovens are a popular choice for many commercial kitchens. With three different lines and a plethora of features available within the Bakerlux collection, there are plenty of factors to consider before making a purchase.
Despite the number of models available, all ovens in the Cadco Bakerlux collection share some common features. Each model is constructed of durable stainless steel to withstand use in the busiest kitchens. Each oven, both half- and full-size models, is designed for countertop installation, and they all feature an automatically reversible fan in addition to an ENERGY STAR certification. With the exception of two of the Touch models – the XAFT-04HS-TR and XAFT-04FS-TR, which come standard with a side-hinged door and an automatic lock feature – all Bakerlux models feature a bottom-hinged door. Cadco Bakerlux Go
Despite being the simplest model available, the Bakerlux Go line still offers an innovative baking experience. Like all Bakerlux models, it features an automatically reversible fan for even cooking. This model is available only as a half-size unit with three shelves, making it a perfect addition to compact kitchen spaces. For greater user convenience, the Bakerlux Go features digital programmable time and temperature controls and can save as many as 99 programs – 12 of which can be stored as Quick Access programs. This model utilizes a three-stage baking process.
Cadco Bakerlux LED
Adding another level of versatility, Bakerlux LED models allow for the use of a proofer, which needs to be purchased separately from the oven. These models are available as full- or half-size units, and although they feature the same reversible fan and three-step process, the Bakerlux LED also allows operators to change humidity settings. Great for applications such as proofing bread or pizza dough, this model enables precise control over humidity. The LED models also have customizable fan speed and steam input.
Cadco recommends a standard ice machine filter be installed if you plan on using the humidity feature in your Bakerlux oven to ensure sanitary baking conditions.
Cadco Bakerlux Touch
The Bakerlux Touch is a step up from the previous two lines. Available in half- and full-size models, the Touch features a precise nine-step baking process, two fan speeds, and humidity controls. In addition to the ability to save 99 programs, the Bakerlux Touch oven features Wi-Fi compatibility and USB programming that further enhance customization and personalization. The precise cooking and leavening settings make this model ideal for operations with a highly specialized menu or a specialty focus on baked goods – or any operation seeking maximum control over the baking process.
