CiBOPlus High Speed Ovens have innovated the high-speed oven market with their tri-heat technology. Like many high-speed ovens, CiBO uses a combination of microwave and convection heating to rapidly cook food, but what makes these models unique is CiBO's third cooking method: the ContactBase feature. This utilizes a temperature-controlled Neocream glass ceramic base.
How do CiBOPlus ovens work?
CiBOPlus ovens are controlled with a touchscreen display offering options for as many as 80 custom cooking recipes. Each recipe can be programmed and transferred to other ovens via a USB port, eliminating the need for operators with multiple ovens or restaurants to keep manually programming new units.
In the recipes, users can choose how much microwave and fan power they want to utilize and adjust the temperature of the oven and the ContactBase, fully customizing the cooking process. The three different heating methods ensure efficient and thorough cooking, and the detailed settings let you tinker with your recipes until they’re cooked just the way you envision. The Turboair convection delivers heated air in a cylindrical pattern for consistent heating, and the ContactBase prevents microwaved bread's inevitable soggy bottom .
In addition to quick cook times, the CiBOPlus oven features a compact design. At 153/5 inches wide and 287/10 inches deep, it easily fits on most countertops in either the front or back of house, making it ideal for restaurants with limited space. Because of its unique design, it can fit into a plethora of restaurant concepts, whether you simply need it to cook frozen items in a small coffee shop or need it to quickly prepare something as delicate as salmon. The oven cavity measures 132/5 inches wide by 132/5 inches deep by 77/10 inches high, making it ideal for heating up individual dishes, but also large enough to heat a 12-inch pizza.
Additional features
CiBO ovens come in several colors, enabling operators to color-code each oven to the type of food it cooks or simply match the look of their establishment. Numerous add-ons, including trays, sheets, and cleaners, can be purchased for additional functionality.
CiBO recommends always cooking on the Teflon sheet if heating items directly on the glass.
