Cookshack FEC240 Description

Ideal for high-traffic establishments looking to smoke high-volumes of meat, the Cookshack FEC240 commercial oven ships with eight 23-inch by 17-inch fixed racks that are nickel plated to retain a quality appearance over time. These racks can be used to hold 250 pounds of pork butts, 240 pounds of brisket, 180 pounds of ribs, or 60 whole chickens. The interior area of this unit measures 21.72 square feet for compact packing, and the interior is double walled and made of stainless steel to establish a durable design resistant to scratches and abrasions. Dependable in a variety of climate settings, it uses Spin-Glas® insulation to keep consistent temperatures. The racks are removable at the end of the day, allowing users to reach crevices for cleaning.

This commercial smoker unit offers a "green alternative" through its operation, while the side-mounted hopper can accommodate 35 pounds of pellets. After starting up using the 100-percent wood pellet heating system, this unit can reach temperatures as high as 400 degrees. As stored meat cooks, any drippings exit to the bottom-placed drip pan. For even cooking process, the air-intake system is placed behind the cooking area and migrates down the smoker. Users can remove accumulated ash through the ash door. Overall, it measures 46 1⁄2 inches wide by 35 inches deep by 76 inches high, however, users should note it requires enough clearance on each side to add pellets to the hopper and access the ash door.

The Cookshack FEC240 simplifies use with the IQ5 control panel. For convenient communication of operating conditions, it's installed with an LCD display featuring 16 characters. Users can program eight separate cooking presets for simpler operation, and this unit is implemented with a USB import that can support as much as 512 hours of cooking time. For versatility, it offers 3-stage, 2-stage, and probe cooking modes. When the cook cycle comes to an end, the controller brings temperatures back to resting temperature.
