This equipment's easyTouch 9-inch touch-screen controls provide an easy-to-use interface for operation. As many as 399 cooking profiles are programmable with up to 20 steps each, so every menu item prepared with the oven can be programmed into the unit's memory.
This full-size combi oven accommodates as many as 20 full-size steam table pans. A temperature probe can be inserted into cuts of meat to be cooked to temperature for the precise results that chefs are looking for. The oven can also be set to keep records for HACCP and pasteurization procedures. Users can cook with three main modes: steam only, steam and hot air combination, and hot air only, or they can choose from four specialty settings for achieving precise results.
