The Convotherm C4ET10.20GS combi-oven can accommodate as many as 20 full-size steam table pans per batch, allowing it to cook up to 220 pounds of food at a time. Chefs have the choice between three main operating modes: steam only, hot air only, and steam and hot air combination. Four additional specialty modes are designed for specific needs, including one to remove excess moisture from crispy foods, one for traditional baking, and one for high-humidity baking.
This combi oven from Convotherm can store 399 menu item procedures in its internal memory, and each of those can involve as many as 20 steps to give operators the ability to reproduce dishes quickly and consistently each time. Those menu procedures and the oven's software can be updated via the equipment's integrated USB and Ethernet ports. All of the Convotherm C4ET10.20GS oven's settings are accessed via the 9-inch touch screen controls.
