An air-cooled condenser operates with a fan that blows cool air over the coils, chilling refrigerant to cool the evaporator plate so water freezes as it runs over it. This ice machine forms full-cube ice, which measures 0.875 inch by 0.875 inch by 0.875 inch and is typically used in restaurants and bars because it melts slowly.

In an ice machine head, the food zone houses all components that come in contact with ice and water, meaning these parts should be cleaned often to prevent ice contamination. These components are made of white plastic, ensuring users can see when cleaning is required, and the material also resists corrosion.
