To streamline back-of-house processes, the Hobart PW12N-ADV-2 Advansys™ pot, pan, and utensil dishwasher establishes a comfortable working height with its 32 3⁄16-inch-wide by 37 3⁄16-inch-deep by 88 11⁄16-inch-tall body. Its 16-gauge stainless steel construction provides lasting rust, wear, and corrosion resistance to endure high-volume use. Its chamber accommodates 12 full-size sheet pans or one 140-quart mixing bowl, and its front-loading door sports a vertical, lift-up design to ease insertion and retrieval. Dishes can be sprayed down with the hose and then placed on the included flat grid, tray, rack, or flat bottom rack. To ease cleanup after wash cycles, this unit features removable stainless steel scrap screens and a scrap basket.

To minimize energy usage as water is heated, the Hobart PW12N-ADV-2 commercial dishmachine's steam elimination and recovery system uses heat from generated steam to warm incoming water before it's heated to 180 degrees Fahrenheit with the Sense-A-Temp™ booster heater. Staff can select from the 2-, 4-, or 6-minute wash cycles to account for various soil levels. The 2-minute cycle cleans 13 racks per hour, the 4-minute cycle washes nine racks per hour, and the 6-minute wash cycle sanitizes seven racks per hour. Each cycle uses 1 1⁄5 gallons of water, or 24 gallons per hour. The two revolving, anti-clogging wash and rinse arms produce consistent results and can be interchanged as needed, and to minimize manual tasks, this unit features an automatic pumped drain and automatic fill. To maintain a clean system, its microcomputer provides an advanced delime notification.
