The True TSSU-72-30M-B-DS-ST-HC~SPEC3 dual-side sandwich and salad prep table offers ¹/₂-horsepower fan motors that are sealed and self-lubricated for effective operation. The fan's large fan blades promote efficient, low-velocity yet high-volume airflow that facilitates air below the pans and inside the unit's cabinet. Cooling happens when the unit's self-contained refrigeration system's condenser and evaporator work together to output R290 hydrocarbon refrigerant—an eco-friendly coolant that helps the unit maintain a set temperature between 33 and 41 degrees Fahrenheit. The evaporator sports an epoxy coat that withstands high-intensity operation, and for simple maintenance on the condenser, it's located at the rear and slides out with minimal use of tools.

To further lock in cold temperatures, this prep table is fitted with three full doors, each of which is supplied with an all-metal handle for a sturdy, unrelenting design. Six PVC-coated shelves are installed inside the cabinet: two for the right section, two for the left section, and two for the center section. The left and right shelves measure 21⁹/₁₆ inches by 16 inches, while the center shelves measure 23¹/₂ inches by 16 inches to accommodate bulk inventory.
