The True TSSU-72-10-HC ADA-compliant food prep table's front, top, and sides are constructed of stainless steel, and its interior is lined with clear-coated aluminum and insulated with foamed-in-place polyurethane to retain cold temperatures. The interior's floor is made of stainless steel and has coved corners to aid in cleaning. The countertop prep area is equipped with foam-insulated, removable lids and a hood that keeps pan temperatures cold and ingredients fresh. It comes with 18 sixth-size pans made of durable polycarbonate and six heavy-duty, PVC-coated wire shelves that are adjustable to maximize storage space.

The True TSSU-72-10-HC sandwich and salad prep table has a full-length removable cutting board for a food preparation area. A self-contained capillary tube system meters R290 hydrocarbon refrigerant to cool the unit. The self-lubricating evaporator fan motor and large fan blades provide consistent airflow, and the evaporator is coated in epoxy for corrosion resistance. It holds set temperatures between 33 and 41 degrees Fahrenheit, which are kept even by guided airflow.

Ensuring the condensing coil remains clean, the reverse condensing fan motor blows in reverse for 20 seconds each time the compressor starts. This helps to remove dust, dirt, and debris, helping the coil run more efficiently to provide improved product temperatures. To ensure this feature works optimally, routine maintenance should be performed.
