For efficient maintenance, the True TSSU-60-16-DS-ST-HC dual-sided food prep table's condensing unit slides out from the back. Forced-air refrigeration maintains a specified temperature from 33 to 41 degrees Fahrenheit in the cabinet interior and food pans, and guided airflow provides uniform temperatures, reducing energy usage. Its sealed, self-lubricating evaporator fan motor does not need a lot of upkeep, while the capillary tube system uses eco-friendly R290 hydrocarbon refrigerant and is self-contained to facilitate servicing.

When implemented alongside frequent maintenance, the reverse condensing fan motor improves the condensing coil's efficiency. Every time the compressor starts up, the fan motor reverses direction for 20 seconds to eliminate dust and debris from the coil. This feature improves interior temperatures to keep stored product cool.

This True TSSU-60-16-DS-ST-HC salad and sandwich prep table has two full-width cutting boards so sandwiches and salads can be assembled on each side. Toppings are organized in 16 sixth-size, clear polycarbonate pans in the cutout, and insulated lids cover these pans to keep toppings cold. For unrestricted access to ingredients, the lids can be removed, and food can also be stored in the refrigerated, insulated base. To customize the storage space, its four wire shelves are removable and adjustable.
