The True TSSU-60-16-HC prep table holds ingredients in an accessible position in the top compartment with additional product in the cabinet base. The top comes with 16 sixth-size, 4-inch-deep polycarbonate pans, and this unit is compliant with ADA standards because its work surface is 34 inches high. A hood and lid assembly sits over the top section, and operators can lower the lid to retain cold air, lock in freshness, and reduce condensation buildup. Along the front, a 11 3⁄4-inch cutting board provides a place for assembling sandwiches and salads.

In the cabinet base, stored items are held on four shelves that have a wire design to encourage even air circulation, and they can be adjusted to accommodate different products. Lined with clear-coated aluminum, the interior is durable and corrosion resistant, while the floor is stainless steel—a material that increases strength and streamlines cleaning. Coved corners inside the cabinet eliminate cracks and crevices, preventing debris from getting stuck.

The operator can set the temperature in the True TSSU-60-16-HC salad and sandwich prep table to run as low as 31 degrees Fahrenheit or as high as 41 degrees Fahrenheit. Its refrigeration system uses R290 hydrocarbon refrigerant, which is more eco-friendly than traditional refrigerants. Providing cool product temperatures and an increased unit lifespan, the condensing coil is kept clean using a reverse condensing fan motor.
