To streamline the frying process, this Carter-Hoffmann FFSTKPKG Crisp 'N Hold stacked combination fryer dump station features a Carter-Hoffmann CNH18XD countertop unit on top of the Carter-Hoffmann VCNH2W3S vertical cabinet, maximizing fried-food holding. Two product dividers included in the countertop crispy food station's large food bay can separate various items, while a forced-air heating system directs heat through the grate's circular openings to blanket food with warm air. To reduce the risk of hot metal contacting prepared foods, the grate is embossed with a circular texture. Its thermostat is preset to 190 degrees Fahrenheit to ensure foods are held at safe serving temperatures and reduce time-consuming operational oversight.

To preserve heat in cool settings, its bottom and sides are insulated with 1-inch-thick wraparound high-density fiberglass. An integrated, removable bottom-mounted pan catches excess oils for simplified draining and for preservation of crispy food textures. Overall, this stainless steel unit measures 17 9⁄16 inches wide by 33 inches deep by 17 3⁄4 inches high, featuring a high-temperature polycarbonate front rail that protects the serving area from elevated temperatures.

Additional fried foods can be held in the Carter-Hoffmann FFSTKPKG Crisp 'N Hold stacked combination's VCNH2W3S vertical cabinet base, which accommodates six half-size, 4-inch-deep high-temperature amber pans. Its dual-fan heating system features a blower system with rear and base air venting, while front-mounted plenum air guides at the caddy's top and base improve air circulation. The electronic temperature controller can adjust this unit as high as 200 degrees Fahrenheit, and the cabinet can preheat to 180 degrees Fahrenheit in less than 10 minutes. Pans can be loaded into the cabinet's pull-out drawers, while rear and side fiberglass insulation minimizes heat loss to prevent temperature fluctuations that could affect food quality. To simplify transport for maintenance and cleaning, this 20-inch-wide by 30 5⁄8-inch-deep by 30 1⁄2-inch-high stainless steel unit is mounted on four 3-inch swivel casters, two of which have brakes for stability.
