Vulcan VMCS-101 Description
The Vulcan VMCS-101 clamshell hood uses a 9⁄16-inch-thick Rapid Recovery™ composite plate to promote fast temperature recovery and even heating across its cooking surface. Its thermostat adjusts from 200 to 450 degrees Fahrenheit to accommodate different foods. For efficient production, the flat-bar heating elements transfer heat across the plate while reducing energy usage during cooking.
The Vulcan VMCS-101 clamshell hood has a one-hand lift mechanism that holds the system upright, keeping the cooking surface accessible during operation. Its LED indicator lights identify operating mode, while the included plate-gap adjustment accessory supports proper spacing over food. For durability, its stainless steel front, top, and sides withstand repeated use in commercial kitchens.
