The Traulsen UPT4812-LR food prep table combines a prepping space with a refrigerated storage base underneath. It comes with 12 pans for the top compartment that are 4 inches deep, but it can accommodate pans as deep as 6 inches. Divider bars are included so that the unit can hold pans of different lengths and widths. To keep pans level and at safe temperatures, the unit features a pan ledge and a lid and cover assembly that insulates the pan area. The lid pivots open and closed for convenient access to prep ingredients. On the front, a cutting board runs the full width of the table so that salads and sandwiches can be moved through the prep station.

The cabinet in this Traulsen UPT4812-LR compact prep table includes four shelves. Because these shelves are powder coated, they withstand heavy use and resist corrosion. The cabinet doors have a self-closing design, but after 105 degrees, they remain open so users can conveniently stock the interior. Made of stainless steel and aluminum, the prep table is heavy duty, resistant to corrosion, and fitted with four 4-inch casters. Temperatures in this unit range from 34 to 38 degrees Fahrenheit, set by operators to suit their application.
