Temperatures in the Traulsen G21000 commercial two-section refrigerator range from 34 to 38 degrees Fahrenheit, and operators can set this level on the microprocessor controller and monitor it on the LED display. The unit uses R290 refrigerant for eco-friendly cooling. Refrigerant is metered by the expansion valve, ensuring the right amount is delivered to maintain the correct temperature. Because they are mounted in the top, the refrigeration components are less likely to be damaged from dirt and debris but are more difficult to access. To ensure users can access the condenser coil for cleaning, it faces the front of the unit.

Inside the Traulsen G21000 two-section reach-in refrigerator, six shelves hold stored items, and with their epoxy coating, they resist corrosion. Because the shelves are made of wire, they promote complete air circulation. Guards at the cabinet walls ensure product is not stored too close to the sides, preventing airflow from being blocked. The doors are half-height and made of glass to provide product visibility.
