The Vollrath 682150 saute pan is ideal for poaching, searing, and deglazing with its 5-quart-capacity design that features straight, tall walls. It's constructed of 3004-series aluminum—an alloy made with magnesium that's durable and an adept conductor of heat. This cookware withstands continuous temperatures as high as 450 degrees Fahrenheit and intermittent temperatures as high as 600 degrees Fahrenheit, while its natural finish works well with oils and grease. Its cooking surface measures 12 inches in diameter and features a silicone handle with an ergonomic design for a comfortable grip, reducing heat transfer to employees' palms.
